*Sukkot is also known as the “Feast of the Ingathering.” This agricultural festival was connected to the time of year when farmers in ancient Israel harvested all of their crops from the field. Since Sukkot is linked to the harvest it is tradtional to eat lots of seasonal fruits and vegetables.
Ingredients
1 can peach halves (16 ounce)
1 can pear halves (16 ounce)
1 can apricot halves (16 ounce)
1 jar maraschino cherries
1 can pineapple chunks (20 ounce)
1/3 cup sugar
2 tablespoons cornstarch
1/2 cup light corn syrup
1 cup orange juice
2 tablespoons orange rind
Directions
1) Drain all fruit. In a 2 quart baking dish arrange peach, pear, and apricot halves. Set cherries inside hollows of fruit. Layer pineapple rings on top.
2) Combine sugar, cornstarch, corn syrup, orange juice, and orange rind in saucepan over medium heat. Stir constantly. Bring to a boil and remove from heat.
3) Pour sauce over fruit.
4) Bake at 350 degrees for 25 to 30 minutes. Let sit five minutes.
